Craft and Comfort

Conceived by San Diego designer Jacoi Mann, Bonne Vie blends European influences with contemporary ease. Deep blue and gold tones, velvet seating, and glowing chandeliers create a polished yet relaxed atmosphere, while the bar offers an intimate, design-forward nook. Custom Sapele tables feature marble tops and brass accents, and Steelite china combines functionality with sustainability. Every element, from furnishings to finishes, contributes to an atmosphere of vibrancy and comfort, crafting a space as memorable as the cuisine it frames.

Elevated Culinary Experience

At the helm of Bonne Vie is Executive Chef Fabrice Hardel, whose 30+ year international career spans Michelin-starred kitchens across France, Luxembourg, the United Kingdom and the United States. A native of Bayeux, France, Chef Hardel trained at the French Culinary Institute, where he developed a foundation in classical technique that continues to inform every dish. He has led The Westgate Hotel’s culinary team since 2001 and is now supported by Food & Beverage Manager Mary Watson, a seasoned hospitality professional with over two decades restaurant and event management experience.
