DESIGN ROOTED IN CRAFT AND COMFORT
Conceived by acclaimed San Diego designer Jacoi Mann, Bonne Vie pairs subtle European influences with contemporary ease, offering a setting that balances artistry with accessibility. Deep blue and gold tones, textured beige and earth-toned fabrics, sumptuous velvet seating, and softly glowing chandeliers blend with ornate detailing to create a space that feels both polished and relaxed. The bar introduces a more intimate rhythm, functioning as a cozy, design-forward nook with an easy charm that naturally draws guests in.
Custom Sapele tables with marble and granite tops feature satin brass accents, metal toe caps, and Blue Bahia polish, reflecting meticulous craftsmanship. Steelite china and silverware combine functionality and design, while minimizing environmental impact. Every element, from furnishings to finishes, contributes to an atmosphere of vibrancy and comfort, crafting a space as memorable as the cuisine it frames.
CULINARY TEAM AND REFINED MENU OFFERINGS
At the helm of Bonne Vie is Executive Chef Fabrice Hardel, whose 30+ year international career spans Michelin-starred kitchens across France, Luxembourg, the United Kingdom and the United States. A native of Bayeux, France, Chef Hardel trained at the French Culinary Institute, where he developed a foundation in classical technique that continues to inform every dish. He has led The Westgate Hotel’s culinary team since 2001 and is now supported by Food & Beverage Manager Mary Watson, a seasoned hospitality professional with over two decades of restaurant and event management experience.
The menu presents modern American interpretations of classic French dishes, rooted in time-honored technique and elevated with fresh, local ingredients from purveyors such as Vesta Produce and Santa Monica Seafood. Signature offerings include Burgundy Escargot in garlic parsley butter and French Onion Soup with rich, slow-simmered beef broth. American-inspired dishes, including the banh mi style Fried Chicken Sandwich with kimchi and sweet chili aioli, and Braised Short Rib with roasted parsnip mousseline, showcase the balance of French finesse and Californian approachability. Seafood specialties, such as Icelandic Cod Meunière with potato purée and brown butter sauce, reflect the same commitment to carefully sourced ingredients, seasonality, and unforgettable dining experiences.
